Salsola soda, Vegetable
Salsola soda is a salt-tolerant plant (halophyte) in family Amaranthaceae, native to Mediterranean basin, Eurasia and North Africa. It is commonly known in English as Opposite Leaved Saltwort, Opposite leaf Russian Thistle, or Barilla Plant. In Italy, it is known as Barba di Frate (Friar's beard), Agretti, and Liscari sativa. It grows in coastal regions and can tolerate salt water. Salsola soda is an annual, succulent plant growing up to 0.7 m tall. It produces fleshy green leaves with green or red stems. Near the base of stem, inflorescences of tiny flowers are grown out of the base of the leaves. In Mediterranean basin, Salsola soda is often grown in saltwater irrigated land, though it can grow without salt water. The plant is harvested in bunches when small, or cropped regularly when mature to promote new growth. Salsola soda is often eaten as boiled vegetable, and serve while it is still a bit crunchy.
