Radichhio, Vegetable

  About Tim & Esther

Radicchio (Cichorium intybus) is a popular leaf chicory in family Asteraceae. It is also known as Italian chicory and is cultivated for its edible, white-veined maroon leaves.

Radicchio is an exotic Italian salad ingredient with a bitter and peppery taste which mellow when grilled or roasted. Radicchio is sometimes eaten grilled in olive oil or roasted, or mixed into other dishes, such pastas and risotto.

Radicchio resembles lettuce in appearance, growing low to the ground with a tight head of red leaves furled around a central core. Radicchio is rich in phosphorus, calcium, vitamin B, and C.
