The leek (Allium ampeloprasum var. porrum or Allium porrum), like onion, shallots, scallion and garlic, is a vegetable in the Alliaceae family.

Leek is a hardy plant, and looks like a large scallion. It has small bulb and a long white cylindrical stalk of superimposed layers that flows into tightly wrap, flat, green leaves. The white onion base and the light green stalk are usually used in cooking, adding flavor to stock and dishes. The dark green leaves are usually discarded since they have a bitter taste, less flavor, woody and very chewy.

Cultivated leeks are usually 30 cm tall and 1.5-2.5 cm in diameter. They are easy to grow from seeds and can tolerate an extended harvest. Leek contains a great amount of flavonoid kaempferol, B vitamin folate, and antioxidant polyphenols.
