Eddoe, Vegetable

  About Tim & Esther

Eddoe (Colocasia esculenta var. antiquorum, native to tropical Asia, is a small, starchy and spherical root vegetable that is closely related to Taro. Fresh eddoes are known as Arbi, Taro, Nampi, Chinese Taro, and Coco yam. It is known as malangas in Spanish-speaking areas. Eddoe has been cultivated as a crop in China and Japan.

Eddoe is a versatile vegetable used in Indian, Chinese and Caribbean cuisines. It can be prepared and eaten in much the same way as potatoes, sweet potatoes and yam. It is perfect for baking, boiled, fried, mashed, chipping or roasting. Once cooked, eddoe has a sweet, subtle, and nutty flavor.

Eddoe grows best in rich loam soil with a good drainage.
